Wild Rice Quiche Recipe
1 unbaked pastry
shell ( 9 inches)
1/3 cup chopped bacon , Canadian bacon or cooked
ham.
1 small onion, finely chopped
1 tablespoon butter
1/4 pound Monterey Jack cheese, shredded
1 cup cooked wild rice (available from Nature's
Wild Rice Co.)
3 eggs
1 1/2 cup Half and Half
1/2 teaspoon salt
Preheat oven to 425 degrees.
Bake crust 5 minutes. Remove from oven and set aside. Reduce
oven temperature to 350 degrees. In medium skillet sauté Canadian
bacon or ham and onion in butter until onion is tender. If you're
using bacon, chop up into 3 slices and fry until crisp. Remove bacon
from pan. Add onion to drippings and sauté until soft. Layer
bacon, onion, cheese and wild rice in crust. In medium bowl using
and electric mixer, beat eggs, half and half, and salt. Pour over
ingredients in crust. Bake 45 minutes or until center is firm. Let
stand 10 minutes before cutting. Makes 6 servings. Quiche is a
breakfast favorite!!
