Ingredients:
1 clove garlic
1 tbsp. olive oil
5 cups water
1 cup Autumn Lentils (or any color)
1 cup cropped onion
1/2 cup celery; sliced thin
1 cup carrots; diced
1 1/2 tbsp. tomato paste
1 bay leaf
1/8 tsp. chili powder
1 tbsp. salt
1/2 cup parsley; chopped
Instructions:
Put first 7 ingredients in pot. Bring to a
boil then add next 4 ingredients and continue simmering till lentils are
soft. Approx. 2 hours. Just before serving add the
chopped parsley. Garnish with cumin and mint. |
