Nature's Cream of Wild Rice Soup

 

2 Cups cooked Wild Rice (1/2 c uncooked rice)

1 Large Onion, chopped

1/2 Large Green Pepper, diced

2 ribs of celery, diced

1 small can mushrooms drained

1/2 C. Butter (1 stick)

1 C. Flour

8 C. Chicken Broth (hot)

Salt and Pepper to taste

1 C. Half & Half

4 Tbsp. Sherry

 

 

Prepare the wild rice according to our enclosed basic directions.  Sauté the onions, green pepper, celery and mushrooms in the butter about 5-7 minutes.  Sprinkle in the flour, stirring and cooking until flour is mixed in, but do not let it brown.  Slowly add chicken broth, stirring until all flour-butter-vegetables mixture is blended.  Add the wild rice and season to taste with Salt and Pepper.  Simmer for 10-15 minutes, until thoroughly heated, stir in the Half and Half.  Add the sherry, heat very low......do not boil.  Soup recipes and more Free recipes available back on the recipe page!!

Soup recipes are a "favorite" with everyone and this Wild Rice Soup is one of our the best we have tried!  Nature's "Broken" wild rice would be perfect for this soup recipe but you can also use the Better wild Rice or Jumbo Fancy!  It's your choice.
