1 cup Tri-Orzo - (rice shaped pasta
flavored with spinach, tomato & natural flavored orzo)
1/2 cups seeded cubed tomatoes
1/3 cup cubed seeded cucumber
1/4 cup chopped green onion
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh mint Bring medium pot of salted water to
boil. Add sugar snap peas; cook one minute. Using slotted
spoon transfer peas to strainer. Rinse with cold water and drain.
Add orzo to same pot. Boil until tender but still firm to bite,
about 8 minutes. Drain& cool.
Place orzo in bowl. Mix in snap
peas, tomatoes, cucumber, green onion, parsley, mint and lemon peel.
Season with salt and pepper.
Dressing:
2 Tablespoons fresh lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon minced garlic
1/3 to 1/2 cup olive oil
For dressing: Combine
ingredients and whisk in the olive oil. Pour 1/2 of dressing over
orzo mixture and refrigerate until chilled. At serving time, toss in
enough remaining dressing to coat generously.
